Sweet & Sour Sauce
(Low Sodium & Gluten Free)
1/2 c. sugar
1/2 c. rice vinegar
1/4 c. water
1/4 c. pineapple juice
3 tbsp. ketchup (I used 1 1/2 of no salt, and 1 1/2 regular)
1 tbsp. cornstarch
dash of garlic and onion powder
In a saucepan add first four ingredients, turn heat to med. high heat. Stir to remove lumps.
In a separate bowl whisk together ketchup and cornstarch, until most lumps are removed.
As the liquid begins to boil, whisk until the sugar is dissolved. Add ketchup mixture and whisk together. Continue to whisk as it comes back to a boil, the sauce will thicken. Whisk in a dash of onion and garlic powder just before removing from heat.
Serve over chicken, shrimp or pork with sautéed veggies and rice!
