Stuffed Bell Pepper Soup

Stuffed Bell Pepper Soup

(Low Sodium and Gluten Free)
1 lb. ground beef
1 lg. can no salt added whole plum tomatoes
1 can no salt tomato sauce
1 c. instant rice
1 tsp. oregano
1 tsp. chili powder
1 c. bell pepper diced
2 tbsp. ketchup (regular, adds a small amount of salt for flavor)
1 carton no low sodium chicken stock
Brown beef in soup pot, drain excess fat.
Add pepper and whole tomatoes, cook down.
You can break down the tomatoes with a wooden spoon.
After peppers are tender add all other ingredients and cook until rice is plump.
Serve hot. Left overs can be saved, but juice will slightly reduce due to the rice.
