Mexican Fiesta Soup

Mexican Fiesta Soup

Ingredients
1 can whole kernel corn (drained)
1 can black beans (rinsed and drained)
2 tbsp. olive oil
1 1/2 c. of milk (any will work)
1/2 c. shredded cheddar
1 lb. Ground Beef
1 Small Onion, diced
1 tbsp. minced garlic
1 pkg taco seasoning
1 can condensed fiesta nacho cheese soup
1 can diced tomatoes (petite are best)
Directions
Sauté onion and garlic in oil on low until translucent.
Add beef and brown, drain excess fat.
Add corn, beans, tomatoes, milk and soup; mix until incorporated.
Mix in taco seasoning. Cook on medium-low heat for about 20 minutes.
Serve with shredded cheddar on top.

(Sour cream and scallions are delicious on top!)
