Italian Potato Soup

Italian Potato Soup
 
 

 
 
 
 Ingredients
4 Med. Potatoes washed and sliced
3 cups of chopped kale (rinse thoroughly)
1 pint heavy whipping cream
1 carton of chicken broth/stock
1 med. onion diced
1 clove of garlic minced
1 lb. pork Italian sausage (recipe on the main page)
1 tsp. parsley
1/2 tsp. thyme
1/4 tsp. garlic
1 c. of water
salt & pepper for your taste
 
Directions
In a large soup pot sauté onion and garlic until translucent.
Pour in chicken broth and water, add potatoes and cook until tender.
While cooking the potatoes, brown and drain sausage in separate pot.
After potatoes are tender add parsley, thyme and garlic.
Add sausage and heavy cream, bring to a boil.
Wilt in kale 1 cup at a time.
Simmer for an additional 20 minutes.
Serve with fresh croutons or bread.
