Yield: 4 Servings
1 lb. ground beef or pork
1 tbsp. Olive or Safflower Oil
5 large potatoes peeled and chunked
3 large carrots peeled and chunked
3-4 c. of water (depending on cooking time)
1 pkg. onion soup mix
1 tsp. of each-garlic powder and parsley flakes
1/2 tsp. salt
1/4 tsp. freshly cracked black pepper
1 can condensed tomato soup
2 tbsp. tomato paste (the tube is perfect for this!)
Brown beef in oil and drain. Place in crock pot with all ingredients excluding the tomato products. Cook for at least 5 hours. Add tomato soup and paste, then cook for an additional hour. Be sure to check potatoes and carrots for tenderness before serving.
Serve with fresh bread or cornbread!
