Double Chocolate Truffles

Yield: 12 Truffles
Double Chocolate Truffles
1 1/2 c. of semi-sweet chocolate chips
1/2 c. of mini chocolate chips
4 tbsp. whipping cream
1 tsp. vanilla
Dust or Cover
shredded coconut
cocoa powder
powdered sugar
chopped nuts
Place 1 1/2 c. of chips in heatproof glass bowl.
Heat whipping cream on stove or in microwave until it begins to boil.
If using the stove stir consistently.
Pour cream over chocolate chips and let set for about thirty seconds.
Stir until chips are melted and add vanilla. Let mixture set to cool on the counter.
After about three minutes stir in mini chocolate chips, (we do not want these to melt).
Place the mixture in the fridge until firm.
Roll truffle mixture into balls and roll in your dusting or covering of choice from the list above.
Keep the truffles refrigerated until time to serve.
